The Ilkito station, established in 2016 in Yirgacheffe's highlands, sources its distinct, dense, and clean coffee from a 2-hectare area nearby. Grown under the shade of Cordia Africana, Acacia, and Ensete Ventricosum trees, the coffee matures slowly, enhancing its flavor and contributing positively to biodiversity. While smallholders like those at Ilkito face challenges meeting costly environmental certification standards, they offer a stark, eco-friendly contrast to the large-scale deforestation practices seen in many South American coffee regions.
